I like the way they made the sauce. That's something one could try at home.

Hi all,

I've been following this thread for a while. Anyone cracked the formula yet? Here's an article that may shed some light on the ingredients

Of particular interest:

"They said that doner meat is made from lamb belly (that fattest part) and the fundamental ingredients are rusk, salt, onion powder, chopping phosphate and ground pepper."

Hope this bit of info helps with the quest!!

I won't have time to read this post in full, so appologies in someone has posted similar. I'm sure I heard or read somewhere that donner was 'invented' in Germany by a Turkish imigrant (Germany has a large Turkish population). You could try finding a forum similar to this based in Germany and use Google Translate to find any info. Alternatively, if sucha forum exists, you could post a message headed 'Donner Kebab Rezept-Hilfe auf englisch'.

I have seen a Turkish guy constructing a 'leg' on Youtube and he used alternate layers of thin slices and minced meat compressed.

Hey guys

It's a shame that both breaddrink and barracuda disappeared from the thread and did not let us know if they finally got the recipe!
I'm through the same route now and tried a lot of recipes, and none of them worked.
I've read through this topic and see someone advised to use Monosodium glutamate and Disodium 5'-ribonucleotides which I have never used. Probably this is the key?

There are a few recipes in this thread that are new to me but I am so tired trying so would really love to have the final recipe based on someone's experience.

I really hope someone will get back here.

Sorry to necro an old thread...

I work in one of those doner factories.

our mix is for 400kg so you will have to scale down but the ingredients are:

MRM 130kg
Lamb 50kg
Flank 50kg
Fat 100kg
Soya 20kg

Salt 6kg
starch 4kg

Citrus Fibre 2kg
Soya900 isolate 1.5kg

White pepper 2.5kg
Cumin 1.5kg
Onion powder 2kg
Garlic powder 2.5kg
MSG 2kg
Paprika ½kg
Phosphate 1kg
ground ginger 20g

Flour 4kg
Rusk 17kg

Thats the recipe for the original elephants leg doner, the spices change regards which doner is being made obviously as does the various meat and fat contents. Some doner dont use lamb fat and some do, not sure about london recipes but thats your basic one right there, i'm happy to help where i can with regards spice mix recipes etc just give me a shout

Someone also mentioned the red sauce i think that goes on the kebabs, its called Harissa and there's a handy recipe here

Theres lots of recipes some use mince some use beef some use lamb some use thinly cut lamb to layer on the skewer others layer big hamburgers on the skewer
Heres an authentic Turkish one (but they use soy sauce ????

Late to this one (like a few recent posters) but I can recommend the Doner recipe in "The Takeaway Secret" book - it's only a few quid on Amazon. Closest I've got to the real deal (as a late night in London post-pub Doner gourmet!).
The only change I've made is using minced lamb breast mixed with beef rather than standard minced lamb.
