hi.can anybody help me with a recipe for capicolla /porchetta or capicolli.thanx /jon

Mr. Poli's page has 2 formulae that may work for you....take a peek, in the 'C's', and stay away from the imperial measurements.....or at least make sure they converted properly. Some of the conversions for some formulae there are waaaaay wrong, and while they won't make you dead, they will make the product very hard to eat.
