Hi Jen, kencur root is also known as lesser galangal, and is a fairly mild citrus-y gingery taste (I'd add some more of the ginger and laos and a bit of lime zest if you can't get any, but it is sold in some Chinese grocers) and candlenut can be replaced with either macadamia or cashew.
For me, the bigger problem is getting fresh tumeric, so if anyone knows somewhere in the UK............

I can get galangal in Waitrose here. As to fresh turmeric, I'll ask around the North London and Birmingham traders I know, but I'm just wondering if the Hari Krishna temple/college/refuge at Haywards Heath in Hertfordshire may be able to help. They grow all their own stuff, sell really good quality cooked food from their own produce, and they will really put themselves out to help you. I often take my dad out for an outing there, I think he's a closet hippie at heart, and I'm always struck by the enterprise of the place. A wander down Mill Road in Cambridge might come up trumps, there's a multitude of ingredients to be had there.
If I find a source I'll let you know.

what does freash Tumeric look like, what is other names does it have?
I live near places I can buy stuff that I don't know what it is and some of the traders don't have English words for all their products

Turmeric is referred to as Haldi or Huldi, if that's any help. I've no idea what it looks like.

Fresh tumeric looks like fresh ginger: it's a big, fat rhizome (rhyzome?) but with a darker yellow colour. I'd be as pleased as a dog with two big pieces of tumeric if anyone could get me some in good enough condition to grow: I have ginger and galangal growing in the bathroom already.
