First timer !!

Unwrapped my Xmas presents and there was an electric mincer/stuffer....fantastic as I have been after one for a while and my other half has been sorting it out without me knowing....along with the stuffer was a few kg's of rusk and a bag of hog casings. Went and got some pork today...made the mistake of ordering quantities in Kg' s instead of lbs, so currently have half a mix waiting whilst more hog casings soak... :roll: s'pose I'll get used to it.

Anyway just done a pile of pork and fresh thyme with black pepper, a load of pork with chilli and garlic which are fantastic and now awaiting my pork, chilli, garlic with a hint of lemongrass and lime. (Just had a small patty of this to test....hmmmmmmm.. :shock: ) These should go a treat with the chilli jam I did last month!

Some fantastic recipes posted on the forum and before I started I read various posts for around three hours so I had a bit more of an idea of what I was doing. Great forum !!! 8) 8)
