Monnonite Sausage and salami recipes

We're new to the forum but enjoy sausage-making as a winter hobby. We'd like to try Mennonite sausage. Any recipe suggestions or websites would be appreciated.

for sixty pounds of pork use
500gs of salt
75gs blk pepper
and a good cup and a half of kosher maple flavouring.
or you could just use brwn sugar.
Then cold smoke it for six hours.
bring internal temp up to 150' f
