Bethel's beef sausages

Hello everyone from a dark and rainswept landscape.
Sorry to post such an pathetic little parochial plea but the search for this recipe has been driving me nuts for 20 years.

All through my boyhood and later, Thursday night was always sausage night - and these were the prince of beef sausages made by a little old man called Tommy Bethel in Brynmawr, Breconshire [as was] South Wales. Sadly he passed on long ago and the recipe with him.
These were chipolata size sized medium spicy beef sausages consumed with mash and onion gravy. I'm salivating at the mere thought of them.

If anyone could come up with ideas for ingredients that I can try stuffing I would be extremely grateful.

Hi Di

I was in Brecon last week and asked about your sausage in a local butchers. Interestingly the butcher had heard of Tommy but did not know the recipe.

I can only suggust you get cracking and try making a few different types until you get somewhere near it - if that is of course possible?
