I am doing a trial on Sausagemakers Cumberland sausage and I just want to make enough of the seasoning to make 1lb of sausage.
I prefer to grind my herbs as I use them, so do not want to make more seasoning than I need for the batch.
He quotes using 2.5% of the following mix;
60% salt
13.5%black pepper
4/5%nutmeg
4/5%mace
4/5%coriander
12%cornflour
With my maths being rusty how would I calculate how much to make for 500grams of sausage?

Many thanks for any replies.

You want 12.5g seasoning, so
7.5g salt
~1.7g black pepper
~0.55g nutmeg
~0.55g mace
~0.55g coriander
1.5g cornflour

Sagsagemaker also posted an Excel spreadsheet calculator designed to help in such situations:

If you don't have Excel then you can download OpenOffice.Org which is a free alternative to the Micro$oft Office suite here:

What does the cornflour do in the recipe? Some sort of binder?

His origianal recipe was 72% salt which he thought a bit too salty so he revised it to 60% then added 12% cornflour to keep the mix total at 100%
