Looking for a pepper and ginger sausage recipe.

Had a very nice breakfast sausage the other day. I could taste salt, pepper and ginger and could smell the ginger and pepper.. It was not hot but had a very delicate flavour . It was a nice change to have a sage free sausage.

Any suggestions?
