If I was doing this, I'd work on 10 - 15% leek added to any standard pork recipe.

You can buy a pork and leek sausage mix from weshenfelders I got some as a freebee and it was good.

I used it to make pork,leek,apple and blue shropshire. I noticed that Franco does a leek and stilton mix
