I was trying to locate an authentic Chouriço Mouro recipe. Any help is much appreciated with this Portuguese delite. Thank you in advance.

KC,
Please tell me about the term "Chouriço Mouro." It sounds like our old friend, or a local variation of, chorizo (aka chaurice, etc.) Perhaps made by the Moors? If it were Moorish, it would be unlikely to contain pork, I think.

My sister brought one of these sausages from Portugal, and it's amazing!
The ingredients are: Pork fat, pork meat, blood, capsicum paste (massa de pimentao), wine, garlic and salt. But in what quantites? The sausage is smoked as well. Is anyone capable of making a recipe with these ingredients?
