BBQ Beef Brisket Hot Dog??

Not sure if this is the right place to post this question, I'm new to this forum and sausage making, but I'm having fun eatin.

Question?

Every year I have several whole BBQ Beef Briskets left over. I would like to grind large and stuff some sausage casings with my left over brisket then grill those sausages to warm them, kind of a BBQ hot-dog you might say. any Ideas, are there any recipes that call for pre-cooked meat?

It's probably best posted in beginners, as you have, but I'll leave this one here too for now, I've never made sausages from pre-cooked meat so I hope someone else has.

I don't know about making sausages out of the left over brisket...but we use our left overs in alot of things...enchiladas,in baked beans...even a BBQ brisket Hash.

It might be kind of cool to mix the brisket with some refried beans and stuff that into the casings...it would probably help the brisket from drying out when its reheating..just a thought.

I don't think you could get the cooked meat to bind together to make a sausage. The texture will be crumbly at best. Although you never know until you try though, You might have a winner.

Thats why I suggested the refried beans...that might be enough to help in the binding

You could just make a sausage akin to Cajun Boudin Blanc, which uses pre-cooked pork, rice and spices. It's an interesting texture and taste.
