Pork and Chive

Im working on this recipe, its not quite how I would like it, but its getting there.
Pork and Chive Sausage
2 1/4 lbs pork shoulder
8 oz pork fat, chopped into small pieces
10 oz dried breadcrumbs
7 oz water
2 oz chopped fresh chives OR 2 tbsp dried
3 level tsp salt
black pepper to taste
6 ft of casings
Cut and finely mince the pork and combine all the ingredients, mixing very well indeed. Stuff into the casings and twist link.
