looking for Turkey sausage recipes

hi there, anyone has some recipes for turkey,
I have this huge turkey in the freezer and it's time I do something with it, but it's so huge it won't fit anywhere, it's as big as a babanabox *LOL*
so I'm looking for a recipe that I could do the turkey like a bratwurst, I know just using turkey would make it pretty dry, so any ideas would be awesome, I'm planing on doing sausages next week and I could do the turkey then to :)

Turkey Sausage

1 1/2-lbs ground turkey
1/4-cup white wine
1-tbsp chopped fresh thyme (or 1-tsp dried thyme)
1/2-tsp ground cloves
1/4-cup minced onion
1/2-tsp white pepper
1/2-tsp salt
4-oz bacon, finely chopped
4-egg whites

Combine all, mix well & stuff into hog casing or make into patties



American Turkey Farmer Sausage

5-lbs ground turkey
3/4-tbsp freshly ground black pepper
3-tsp salt
1-tbsp dried sage
1-tsp cayenne pepper
1/2-tsp ground ginger
1-bay leaf, crushed
1-cup cold water

Combine all ingredients, mix well & stuff into hog casing.



Italian Style Turkey Sausage

5-lb ground turkey
2-tsp whole fennel seed
2-tsp crushed fennel seed
2-tsp crushed red pepper
1-tbsp salt
2-tsp dried oregano
2-tsp freshly ground black pepper
1-tsp garlic powder

Combine all, mix well & stuff into hog casing
