made some Mexican Chorizo

my family had a craving for sausage tonight, and I made some quickly,the spices I had from the sausage maker, I used the spice "#91400 Chorizo Sausage Seasoning" but I changed it just a tiny bit, I left out the vinegar and added a little more water, my family does not like the vinegar taste.

I added a few pictures in my blog of the finished sausage before and after cooking :)

I have to wait a few days till I cam make cheese again, since the cows just went to pasture and they dropped in milk :)

this week I will make some more sausages,
one for sure will be with Turkey and the other will be some bratwurst.

Dry salamy is on my to do list, but lets just keep it one or 2 items per day *LOL*

Just catching up on the days business and decided to catch up on some reading. :lol: took a look at the sausage and they sure looked mouth watering.

I had a high ranking official (lawyer) who worked for the government in Mexico city as a customer some years ago. Him and his family had move to Vancouver to escape certain people down there and decided to open a Mexican restaurant.

They came to to see if I would supply them with certain items for making there Mexican dishes, one of which was there family's recipe for making an authentic Mexican chorizo, the following is the same.

7.710 Kg Pork shoulder
3.630 Kg Pork skinless jowl

Spices as follows:
80 gm salt
30 gm onion powder
40 gm ground cumin
100 gm paprika
40 gm cayenne
10 gm garlic powder
5 gm crushed/flaked chillies
150 ml vinegar
360 ml water

Twice course ground.

I did notice that the family dose not like the vinegar taste, add a little more water 'if' needed or you could change the vinegar to tequila which will give it a different flavor. :?
