Newbie with a recipe question

Hi all,

I am looking for an authentic recipe for a sausage/deli meat that I used to buy when visiting North Wales, it was called Haslet. It was pork based and had sage as it's main savoury flavour. I will be returning there in a short while, but in the meantime I would love to make some for myself at home if possible.

Welcome Lynn:D :D

I get a large number of 'hits' on the haslet post on my blog - I'll do a recipe for one done in the more traditional way, rather than as a sausage, in due course. However, it will be more like a Lincolnshire haslet - I'm not quite sure whether the Welsh one is the same?
