Wanted, a good mortadella recipe

Hi,
I would like to make a well tried mortadella recipe, smoked as well and also some input on what type of fibrous casing to use if I smoke the sausage.

As I say in my blog post, I take no credit for the recipe, it came to me via Jason Molinari who I understand got it from a book by Paul Bertolli: no doubt it's had a few tweaks on the way!

I thought it was good. (However, I've no 'real' experience of Mortadella to have anything to really compare it to.)

Thank you for the recipe. I will make it next week sometimes if aI can purchase the collagen casings. Your blog is wonderful, how do you get all this spare time to do it all.
I am nearly 67 and still working like a mad snake, although full retirement is getting closer.

Whats the home recipe for body cleaning and skin lighting?

You posted as I deleted the daft post about body cleansing Zulululu! If they post again, perhaps suggesting that they can cleanse their body by boiling their heads in bacon fat may be appropriate!
