Smoky Mexican Style Fresh Sausage

That looks an interesting sausage - thanks for posting details.

The only feedback I would make is that as you mention that you have microscales to get things right that you move to weighing your spices. It makes it so much easier to repeat a recipe exactly. You'd be amazed how a tiny variation in a spice amount can affect the taste of a sausage, particularly when using small (ish) quantities of meat.
