Italian Sausage recipe

Hello all. I've followed the site for quite a while but have never posted. I'm trying to find a recipe for a fresh italian sausage made with cheese and parsely. Any help would be appreciated.

I think that you are thinking of Barese-style sausage, which contains grated Peccorino Romano cheese and parsley, among other things. I've made it from Len Poli's collection, the recipe is here:

When I grate the cheese I do so very coarsely so that the cheese is clearly visible in the cooked sausage. Also, you can do it with 100% pork, I like it that way.
