paesano (spelling?) recipes

Sorry, managed to put this in the Equipment & Supplies forum first. D'oh. So, lets try again...

I used to buy superb "Paesano Piccante" and "Paesano Dolce" sausages from a great Italian deli in Edinburgh called Valvona & Crolla. Can't get anything nearly as good here in NZ, so would love a recipe to try. Does anybody have a recipe?
