"Asian" Rabbit Sausage

I had a few hindquarters left over from a snowshoe hare hunt last fall and decided to make sausage out of them. I think that rabbit and hare may well be the most boring meat on earth, but this sausage took care of that. I really like the sausages cold because they firm up nicely. Otherwise this is a fairly soft sausage.

"Asian" Rabbit:

-- 2 lb Rabbit/Hare
-- 1 lb Chicken Skin/Fat

-- 1 tbsp Cilantro
-- 1 cup Minched Chives
-- 1 tbsp Brown Sugar
-- 1 tbsp Black Bean Sauce
-- 1 tsp Fish Sauce
-- .5 tsp Minced Smoked Chili
-- Pinch Ground Cloves
-- 2 Pinch Ground Ginger
-- 2 tbsp Tapioca Starch
-- .5 tbsp Vinegar

Mince and stuff.
Chip the glasses and crack the plates!
