Wild sheep ideas?

Been doing venison and wild pig sausage for about 3 or 4 years, but a friend shot a sheep and gave me some ground meat to make something out of. I'm thinking maybe Brats or breakfast type sausage. Any feedback would help.

The Merguez N. African sausage is traditionally made of lamb. There's a recipe here:

You could 'mix and match' the lamb cuts to use up more of the sheep.

Too bad he didn't give you whole muscle. I've had great success with curing whole muscle of wild sheep.

I'd like to find out myself...I called Honolulu and apparently it's no problem for a Canadian to go hunting over there with a pistol. Sweet deal!

Ended up doing a Greek style sausage and it came out really well! Different than anything I've tried previously. I'llCribbed it off another site.
If you want to hunt with a pistol over here, the game would be pig, and you would be using dogs. Other than that, there are Axis deer, goats(kind of stinky), and sheep on the Big Island and Lanai. Also Blacktail Deer on Kauai. Google outfitters hawaii. Axis deer are what I primarily hunt and process along with pigs. I'll try the Merguez next, it looked a touch spicy for Mom.
