Massive Online Text Book

I found this the other day - It is a massive online text book produced by the United Nations Food and Agriculture Organisation. It is a very comprehensive guide to Meat Processing Technology for SMEs and would probably be a a useful handbook for all Sausage Making's meatheads - http://www.fao.org/docrep/010/ai407e/ai407e00.HTM

The FAO has loads of other guides way too many to list here, but well worth searching out.
