I have made some of these burgers with some left over pieces of pork shoulder and some bacon trimmings which needed using up. I was quite suprised how good they tasted and I am now in the process of making another batch for the freezer.
500 grm pork shoulder minced
500 grm Bacon pieces minced
50 grm rusk or bread crumb
1 tsp chopped basil (dried)
1 tsp oregano (dried)
2 tablespoons of finely chopped Sundried Tomato
A couple of squirts of tomato puree
A couple of twists of black pepper
1 egg beaten to help binding
Mix all the ingredients together and form into patties
NB I found that there was no need to add salt as the bacon gave enough
