Potato Bhajias

Hi All

I made these Potato Bhajias yesterday and they were very nice indeed. I had an onion in the fridge and sliced it into rings and dipped it into the batter as well as in the picture.


Ingredients:
250 grm of besan (chickpea flour, found in Indian food shops)
1/2 teaspoon bicarb of soda
1 teaspoon turmeric, chilli powder, coriander powder and cumin powder.
1 Tablespoon of salt
400ml water
1 teaspoon mint from a jar
1 tablespoon pataks tandoori paste
3-4 potatoes washed and sliced. I left the skin on.

Mix everything up as for onion bhajias and fry

A variety of vegetable pakoras like these makes a great starter, I particularly like cauliflower ones but you can also use aubergine, chilli, courgette and many others - panir's nice done this way also.

Hi John, those look great we have a local variation of Bhajias here which is a very popular snack called chilli bites, you can use the same batter that you have mix in chopped shallots or finely chopped onion shredded corriander leaves and some chopped red and green chillie seads removed.
Mix into a stiff batter then scoop heaped teaspoon fulls into hot oil turn them as they cook. I have done spinach leaves and various veggies with it, also little balls minced chicken bit of chopped onion and corriander leaves, roll them in flour then in the batter and deep fry.The spinach leaves come out nice and crispy.

Oh yum yum...that sound fab, how stiff should the batter be??

Stiff enough so that you can scoop like balls of it , just not runny.Tell you what my kid is home for the week end will make some and post some pics for you. :)

- I tried these over the weekend with some jalapenos, diced onion & fresh corriander I had leftover. I also grated a potato in there to bulk it out a bit.

I served them with a cucumber raita as a starter - they were awesome!
