looked good
but
salted way too early
put pepper on after cooking not before (burnt bitter pepper and less caramelised meat otherwise)
I start mine fat side down first to render it and give me meat fat to cook the steak in and add flavour,
I use the flip flip flip Blumenthal method and it works
