Banger Recipe?

I have been looking through the recipe section. I see lots of talk on the origin of the name, but no recipe's. Does anyone have one to share. The big hunk of pork in my fridge needs tending to.

Here are two recipes you might like. The basic pork you can add herbs or whatever you like too, Or it's good as is.

The Basic Pork Sausage "Oddleys"

Ingredients:

FOR 1KG

750 gm Lean shoulder pork
250 gm Hard back fat
2 oz Stale Breadcrumbs 50 gm
2 oz Water 50 gm

Spice Mix

1 tsp Salt = 12 gm
1/8 tsp Nutmeg 0.14 gm
1/8 tsp Mace 0.28 gm
1/2 tsp Black Pepper 1.24 gm


Fatman sausage

1lb 8 oz Lean pork shoulder minced 3/8 plate
8oz Pork back fat minced 3/8 plate
1 tsp Salt
1/2 tsp black pepper
1/2 tsp Quatre-Epices
1 tsp Dried Sage
1 tsp Dried Tyme

Quatre-Epices

5 parts white Pepper
2 parts Nutmeg
1 part Cloves
1 Part Dried Ginger

Mix all ground spices together

Thanks for re-posting those Oddley - i've been looking for a 'basic' sausage for my kids who don't like anything too out of the ordinary or spicy.

Franco's Breadcrumb mix always goes down well with the kids... in fact the love em....then there's my other 25 or so varities too :D.

Am doing some chipolatas and stuffings for Crimbo as well, with roasted chestnut and cranberries etc....yummy !

I'd try it, but it is a bit difficult to find out from Franco exactly what is in his mixes.

How about some an ingrients listing on the mixes ?, think it would help if everyone knew what was in them.....
