Elk Liver & Heart...What would you do?

Howdy all,
My neighbor just dropped me an Elk liver & heart fresh from last nights kill. In years past i've made pates and sausages...but i'm looking for something new.

So..what would you do?
(I'm capable of curing, drying, fresh sausage, emuslifying and most general cookery)
Hit me with it!

I'd be inclined to try a white blood sausage.
(But that could be because I have a friend getting hogs slaughtered and am awaiting blood and ofel to make a first attempt myself).

Thanks..did that last year...sort of thought it was a waste of a heart. Looking to do something that features the cuts :D

For the pepporoni..are you just substituting the heart for the beef component?
