Pomegranate Molasses

Pomegranate juice. 4 cups
Sugar. 1/2 cups
Lemon juice. 1 T

Reduce to 1 cup
Reduce to 1 1/2 cup for syrup

pH (25%)=6.6

Barely sweet with a slightly fruity taste and some astringency in the finish.
