Way funny, Patricia !! :P :P My granny (rip) always called the butt 'the pope's nose....so we do too.
Another variation on all these stuffing recipes is to add 1/4 cup popping corn to the mix, and when the pope's nose blows off, the bird is done...

stuffing

Here's my recipe.
2 onions, chopped and softened in (goose) fat.
2 apples, peeled. cored and chopped.
3 celery sticks, diced.
1lb pork, minced.
2oz pinenuts.
Juice of lemon (2tbs).
2oz fresh breadcrumbs.
Salt, pepper, herbs.
Bake in loaf tin for 1 hour.
This went down well last year. This year I'll make it into balls instead.
