beef faggots

Following on from another thread, I have now tried this recipe:

It uses beef ingredients rather than pork so it took me a while to get hold of everything. I needed 150g ox heart so when I sourced half a heart, got it home and it weighed 1.5kg I knew I had enough for a fair number of tries. I used dried herbs instead of fresh at the same 1 tsp dose. My mix looked very sloppy so I added more bread crumbs until it didn't slump when I spooned it out, it was still too sloppy to handle . With no caul fat available, I wrapped each in bacon, three pieces of supermarket unsmoked streaky/back laid out as a "star", the mix dropped in the central junction then the sides pulled up and over, fried to seal the base, then placed in a hot oven to seal the top without having to move anything. then I poured over the gravy and cooked it in the oven for another 20 minutes.
Nothing like a traditional faggot (which my wife was dreading as she doesn't like them) but truly delicious. Highly recommended.
