preserving elderflower cordial

Hi all

Just made a large batch of elderflower cordial and am looking for the best way to preserve it.

I don't want to use up any of my freezer space so want to bottle the liquid. Any wine makers out there have any suggestions?

I did think of pasteurising it but am not sure if the heat will destroy the subtle flavour

Some recipes advocate pouring boiling sugar syrup over the flower heads and if you are making elderflower wine you normally boil the flowers (less the stalks). I have made it with a hot syrup and it kept quite well in the fridge although it did pick up a tiny bit of fizz suggesting the wild yeasts might have survived to some extent. If you made yours cold I would try jpj's idea. Why not also take one bottles worth and see what happens if you heat it to pateurisation temperatures?
