R�sti, find the potato

I have been searching for the right potato to make R�sti. This was a rather annoying task. It has taken me the whole five years. But today, this evening I had the perfect R�sti on the table. This is how I did it.

The most important ingredient: DESIREE POTATOS!!! YES, I've found them, finally :D :D

Boil the Potatoes gently for 20 minutes, so that they are still firm in the middle. I used a bamboo skewer to test. You must be able to apply lots of force in the middle of the Potato, then their perfect.

Then remove from boiling water, place in colander to cool completely. Place in fridge for at least 3 days (3 x 24 hours).

Grate very roughly. Chop onions and fry with bacon cubes, adding some vegetable or sunflower oil (butter would be traditional). Once onions and bacon are not too strongly fried, add the potatoes and fry, turning every 3 to 4 minutes, until you have a nice mixture of brown and white potato. Be gently not to mush it. Add salt as required. Form a cake as shown below, fry for 3 minutes on a high flame, place the plate on the cake, turn up-side-down, et voila!

The picture below shows how to serve it, decorated with a fried egg and some parsley.

If you intend to make several, once you have your R�sti on a plate, set aside and make the next one. Once all are done, place in a hot oven (200 �C) for 5 � 10 minutes. Works a treat.

I grow those red skinned yellow fleshed "Desiree" potatoes and love them You should try "Agria" a dark yellow flesh and a brown skin. I think you would love it too
