Wotcha every body. I want to make my pork pies early for christmas.So can anybody tell me how long they will keep in the fridge ?

Not very long in my house!

I think you will find that the meat content keeps a lot better than the pastry which after a couple of days will start to go soft if using a water pastry.

I had my pies tested not so long ago and the pork pie, if kept in ideal conditions (5 degrees or under) lasted 6 days before it started to turn. After 8 days you would not eat it, but 7 days was not so bad. This was a test done without a preservative apart from salt of course.

Generally when I make them I make a few and the ones not required straight away go into the freezer till required, uncooked of course.
Then bake when you want them, its worked good for me in fact you cannot tell the difference.
