Rhubarb sauce.

Hi. Anyone have a tried reciepe for rhubarb sauce or rhubarb and apple sauce as an accompanyment to roast pork.

Rhubarb Sauce

1 lb rhubarb, chopped*
6 oz sugar
2 fl oz (8 tbsp) water

Place in a saucepan, cover, and let simmer until all the rhubarb has melted down.

If you add about 4 oz chopped apple and remove the same amount of rhubarb you would have an apple rhubarb sauce.

*If you peel the rhubarb you will get a green coloured sauce.

we sell victoria rhubarb that is green, some stalks can get reddish. It is sold by the whole root, compared to canada red or valentine is division rhubarb.

My mother made a small bowl of this for me at breakfast every day of my life growing up. That is what shaped me into the fine speciman of a man that I am today! :shock: Humble too!

the answer is yes. google: "rhubarb chutney" and you will be overwhelemd with good recipes that will go great with pork and any number of other dishes.

I bet we could get the truth from Mrs Chuckwagon "smokey wagontrack". :lol: :lol:,

I have a huge rhubarb patch, so I might give that sauce a try, at the moment the only time I harvest any rhubarb is when my daughter visits, she just goes crazy for a rhubarb crumble.
