About 10-12 days ago I bought a large piece of belly from Morrisons (on sale.) I cured it using the site's bacon cure. It came out well. (I don't have the facilities for smoking and 'powders' aren't my thing. Nor is freezing.)

Bacon and eggs. Had 'em. Very good. Bacon and nushroom omelet, had one. Very good. But I still have a lot of bacon left. Scheduled in: cabonnara, quiche lorraine. garbure But even after them, a lot of bacon left.

Ideas? Thanks.

(OK. OK. My eye for a bargain got the better of my in-brain recipe collection.)

Bacon Butties - Mmm...

Put in pasta, soups, casseroles. Cut thick slices and use as bacon 'chops'?

Make some into Pâté with chicken liver?

Make savoury American Muffins with bacon bits in?

...and finally, send some to me! :lol:

Chicken breast stuffed with black pudding wrapped in streaky bacon

Macaroni cheese with leek and bacon

Bacon Mushroom Crowns

40 medium mushrooms or 20 portobello mushroms
8 oz bacon, cooked crisp and crumbled
8 oz grated swiss cheese
8 oz softened butter
8 oz crushed corn chips (tortilla chips)
2 garlic cloves, crushed
2 tbsp finely minced onion
1 tbsp dry red wine

Remove and chop mushroom stems. Combine them with remaining ingredients.
Fill mushroom caps. Place on a baking sheet, stuffing side up.
Grill 5 to 7 minutes or till lightly browned and bubbly
