Some Polish spice mix recipes

I had seen some Polish recipes that called for a mix called 'Herbal Pepper' and had no idea what it was. I found it and others in a cookbook and have transcribed them, along with credit to the author and book.


Polish Spice Mixes (from 'Polish Heritage Cookery', by Robert and Maria Strybel)
Note: t = teaspoon
T = tablespoon

Polish Mild Herb Pepper
2t savory
2t marjoram
1t caraway
1t coriander
1t dry horseradish powder
Process together to a powder
**************************
Polish Sharp Herb Pepper
1t savory
1t dry yellow mustard
1t dry black mustard
1t coriander
1t cayenne pepper
Process together to a powder
Herb pepper may be used as a substitute for pepper in Polish dishes

Polish Pork Seasoning
1T marjoram
1t paprika
1t caraway
1t sage
2t black pepper
2t onion powder
1t garlic powder
Process together to a powder
Good with roast pork, roast bacon, etc.

1T kosher salt
1T garlic powder
2T caraway seed
Process together to a powder

Polish Beef Seasoning
1T onion powder
2t black pepper
1t dry horseradish powder
1t savory
1/2t lovage
1/4t ground bay leaves Process together to a powder

Polish Veal Seasoning
1T paprika
2t white pepper
2t garlic powder
1t onion powder
1/2t coriander
1/4t nutmeg
Process together to a powder

Polish Lamb and Mutton Seasoning
1t onion powder
2t garlic powder
2t black pepper
1t rosemary
1t marjoram
1t juniper
1/2t coriander or cardamom
Process together to a powder

Polish Fish Seasoning
1T white pepper
1T dried dill leaves
1T paprika
2t sage
1t sour salt (citric acid crystals)
1/4 t nutmeg
Optional:1-2t mild herb pepper
Process together to a powder

Polish Poultry Seasoning
1T paprika
1T dried dill leaves
1T dry parsley leaves
1T white pepper
1t dry mustard
1/2t nutmeg
Process together to a powder
Primarily for use with chicken or turkey

Polish Goose and Duck Seasoning
2T marjoram
2t black pepper
1t garlic powder
1t ginger
1t savory
1/2t cloves
Optional: ½ - 1t juniper may also be used
Process together to a powder

Polish Hunter’s Seasoning
2T marjoram
1T black pepper
1T onion powder
1T garlic powder
1T juniper
1t caraway
1/2t allspice
1/4t ground bay leaf
Process together to a powder

Polish Pate Seasoning
1T black pepper
2t marjoram
1t onion powder
1t garlic powder
1/2t nutmeg
Optional:
1/2t cardamom, cloves or coriander, or 1/4t of each
Process together to a powder

Polish Sauerkraut Seasoning
1T black pepper
2t onion powder
2t mushroom powder
1t caraway
1t marjoram
1/4t ground bay leaf
Process together to a powder
Sprinkle over sauerkraut dishes

Polish Stew and Goulash Seasoning
1T black pepper
1T paprika
1T dried parsley leaves
1T onion powder
1t garlic powder
1t savory
1t marjoram
Optional: 1-2t cayenne pepper
Process together to a powder
Use to season pork goulash, etc

Information like this is invaluable. I know that sooner or later I'll be searching for a spice mix mentioned elsewhere, and after futile searches in other resources, I'll find it here.

Why doesn't my little brain tell me to search here in the first place? :?

The Polish Heritage cookbook is an excellent resource. When I was asking people in the local Polish/Eastern European immigrant community for a cookbook recommendation, this is the one most said tasted like home.

Hi TJ.
Got my book the herbal pepper formula uses corriander ,dry horse radish,caraway,cayenne pepper,white mustard seed black mustard seed,marjoram,fennel and gentian.To my supprise the gentian turns out to be bitters (Angostura).Apparently Poland could not get pepper so invented their own.You use double the amount of herbal pepper to replace ordinary pepper in a recipe.
I seem to have a problem getting hold of savory here,it is used in herb blends but can't seem to get it on its own.

A few months back, a member of the forum was asking for help on figuring out his grandfathers handwritten sausage recipes. And the word "Seasoning" was in every recipe. And he did not know what the "Seasoning" could have meant.

We all put our guesses in and came to the conclusion it was not salt becuase it was listed elsewhere in his recipes in the correct amounts.

Could this list of "Polish Seasonings" be the answer to the persons question from a month or so ago?

I looked for the original post, but I could not find it anywhere, Hopefully it was not lost during the sites downtime.

Does anyone else remeber the post I am referring to?
