Smoked Potato and Onion with Pancetta etc.

I'll let the pictures speak for themselves. Yes, I made this pancetta myself.

Smoked potatoes are an experience at my house. Here is how it goes.

I start with hickory logs for smoke, the just right size potato and get that onion on the grill. This is a two zone smoker with the potatoes on the cooler side.

Ready to plate, but now we need to cook the toppings.

Yes, I do it by feel. Usually takes about an hour and twenty minutes. The temperature of the grill is in the 400 F - 450 F range on the hot side.

One tip when trying this at home: about 30 minutes into the cook, I spray olive oil (or you can rub it on) the potatoes to keep the skin from drying out and burning. I wait 30 minutes to give the smoke some penetration time into the spud.
