Philippine (Filipino) Sausage?

Anyone know where I can get a recipe for this? The locals called it "Linguisa" (phonetic spelling). It is a stringy, coursly ground, partially dried meat that is not cased with a texture between a course sausage and stringy bacon. It has a strong sweet almost maple syrup flavor.
