My wife has been asking for burgers all week, so here is our default preparation. A simple seasoning on the patties and then grill over hardwood coals. The potatoes are grilled and served with a grilled lemon and pepper aioli.

I like my burger with english stilton and grilled jalapeños. My wife likes here with grated cheddar.

Aioli is:

4 lemons halved and grilled
1/4 cup mayonaise
3 tbs fresh ground pepper (I use a 5 peppercorn blend)
2 tbs red wine vinegar, or cider vinegar or champagne vinegar.

Burgers use Joe's Hot Stuff and a little fish sauce mixed in before forming the patties.

Potatoes are sliced into wedges and parboiled for 3-4 minutes, drained, drizzled with olive oil, and grilled on all sides until done.

I think there is a lot in common between Texas and Australia. You outnumber us in sheep, and we outnumber you in goats. Otherwise, we'll just be killing and grilling right alongside each other.

I used to think the same about New Zealand, until I found out it was illegal to posses pocket knives there. That's a story for a beer.

It was an interesting experience. They took my knife, but I think, the Auckland Police were more interested in my story once they learned I was from Texas.

I don't think the cops in the country towns bother with enforcing it...

I can hardly imagine a society where stabbings are so prevalent! Who wants to open a carbon fiber clothing company in Australia with me?

This is why it is good to have laws where citizens can carry guns. You won't be so fast to pull out a knife if the other guy might have a gun.

Yes but the Vic police have a bad habit of shooting people all the time, even though no-one carries a gun, I would hate to see the statistics if everyone was packing!


In Australia, if you get pulled over by the cops - it's perfectly ok to get out of the car and talk to the cop...

I think if you did that in the US - they'd be pulling 9mm slugs out of your face pretty soon after....

What I thought was funny, was watching the New Zealand news where a dozen cops were trying to stop a guy from stealing a car with wooden batons. They were beating on the hood and throwing their sticks at the car as he pulled off.

Tooo funny.

In 2010, I completed 30 years service as a British 'Bobby'and on joining was issued with my 'tickling stick' - a wooden truncheon that fitted in an inside pocket of your trousers and was not on show as it was deemed to alarm the public. Also issued with a pair of handcuffs and a whistle (Acme 'Metropolitan'). Handcuffs had only just been introduced as issue, prior to that you had to buy them yourselves. Within 6 months I was in a riot situation still only armed with my trusty baton, but at least they gave us shields ! It took another 15 years to be issued with CS spray, side handled batons and stab proof vests. The baton was so awkward to have on your belt, you would leave it in the car and I couldn't stand the restraint that the vest gave, so only wore it when ordered to at public order events (Football matches etc). Common sense was the biggest defence I had and at least lived to tell the tale unlike some poor defenceless colleagues.
