A little summer grill in Texas

My wife has been asking for burgers all week, so here is our default preparation. A simple seasoning on the patties and then grill over hardwood coals. The potatoes are grilled and served with a grilled lemon and pepper aioli.
I like my burger with english stilton and grilled jalapeƱos. My wife likes here with grated cheddar.
Aioli is:
4 lemons halved and grilled
1/4 cup mayonaise
3 tbs fresh ground pepper (I use a 5 peppercorn blend)
2 tbs red wine vinegar, or cider vinegar or champagne vinegar.
Burgers use Joe's Hot Stuff and a little fish sauce mixed in before forming the patties.
Potatoes are sliced into wedges and parboiled for 3-4 minutes, drained, drizzled with olive oil, and grilled on all sides until done.
