Salami smell

Salami smell

I made my first batch of salami a month ago (1st Oct).
For the first week or so it smelled of the red wine I had added.
Then for a while it smelled like salami and the white mould developed.
Now it smells different, its covered in white and green mold and smells slightly off, or is that just the mould im smelling? Its lost the salami smell. Im worried that with the recent warm weather (warm weather in Oct!) it has caused the meat to go off.
Would like to know what other people have experienced. Does salami sometimes go off? Should I be worried? I plan to clean off all the mould from one and then slice and smell it again before trying it.

any advice appreciated.

yes they are bad!

I cut them open and the mould had got into the salami and they did smell off so I threw them out. I wont use muslin casings again.

Don't give up, try again.
The warm and humid weather probably hasn't helped.
Can you tell us any more about these casings.
I have to say I've never heard of muslin casings.
I normally use natural casings but recently have found some very good collagen casings.

my last batch went the same way :cry:
October is not meant to be that hot :twisted:

I'm about to start again so lets hope we get the cold winter we've been promised :wink:
