pure luck with my first batch!!

Hi Im new to the forum and sausage making.
As a mum im quite concerned about exactly what my family are eating so when I saw a mincer advertised in out local co op I thought why not!!
I ordered casings, rusk and some seasoning packs off this site and was quite excited to start!

Everything arrived yesterday and last night I made my first batch of traditional pork sausages by following the recipe on the packet of seasoning.

This morning we had them for breakfast and every single plate was cleared (and my kids can be pretty fussy!!). They were delicious!

Now ive spent all morning reading this forum and id made so many mistakes (the pork had been on the side nearly an hour before being used :oops: ) and im sure I made many more so I think it was just pure luck they came out so well (well by standards lol)

Stuffing the casing isnt as easy as I first thought.....but it certainly entertained my kids and their sleep over pals watching!!!

Very good looking sausage for a first batch, excellent start :). My only suggestion would be to stuff the links a little tighter, you'll be happier with the texture of the final product. But for a first time sausage maker, bravo!

As a beginner you've certainly done very well. This hobby grows on you and you will be experimenting with new flavours etc.
I can see a dedicated stuffer coming up in the near future and a smokehouse as well.
Fresh homemade sausages, smoked bacon, hams, salamis and smoked fish the list is endless.
Your family and friends will be impressed.
Just keep on asking questions on this great forum.

From spending most of today browsing this site and picking up so many tips ive realised one mistake I made, I made my individual sausages while it was being stuffed.....

But ive been out this afternoon to buy my ingrediants for some pork & leek and lamb & mint.......Im well and truely hooked :) and the best thing is watching my kids eat them knowing exactly what they are eating!
