Hole at top of casing.

There is a hole at the top of my casing of a bresaola. The whole thing was dipped in bactoferm 600, so I expect a mold bloom soon. Is there anything to worry about with the hole? I know that some people do not even bother with casing there solid meats.

You can stitch the hole with a thin needle and re-position the knot. I don't case solid meats as more often than not the casings detaches from the meat and, when it happened, it almost invariably grew "the greenies".

Should I stitch it with regular thread? I am not sure that I can move the knot down without tearing it further. I am tempted to just take it out, but I am out of bactoferm. My inclination is to just leave it open, so that there is no trapped air, thoughts?

Here are a couple of updated pictures. It looks like mold has started to grow in the cavity. This is not surprising since it was dipped in Mold-600. It also appears to be the same mold on the outside starting to bloom, again verification of mold type.

Here is the question, should I be concerned about the mold blooming in the cavity, if it is healthy mold?

The mold looks allright. The problem may arise in the air pockets that MAY form away from the laceration.
