chunky mince for salami

Hi, am very interested in buying the Complete salami making kit with mincer from sausagemaking.org but was wondering if it is possible for the mincer to vary the consistency of the mince. I want to make salami using chunky mince. Any info greatly appreciated. Thanks, Max

Hi Maximilian welcome to the forum.

I'm fairly sure the mincer comes with two plates, one fine and one coarse.
If the coarse one is not coarse enough for you then you could add some hand chopped meat as well. I sometimes do this when making Chorizo which traditionally has various sizes of grind in the same sausage.
