Hi, I just bought a LEM #8 meat grinder (http://www.lemproducts.com/product/4259/electric-meat-grinders)and it comes with a 7/8" stuffing tube, however I noticed it's tapered and I'm wondering if collagen casings will fit on this correctly and if so will 22mm casings work or does it need to be some other larger size to account for the tappering?

If anyone also has suggestions on where to buy non pork casings in Toronto (or best place online to ship to Toronto) I'd appreciate the info. Thank you.

a regular hog casing is usually 29-35 mm a 22 mm collagen case will be a real pain to put on that 7/8" tube. Stuffing through a grinder is always a frustrating job. If you are serious about making sausage you need a dedicated stuffer with stainless steel tubes. They make things so much better. For a Canadian sorce of all things sausage try Stuffers.com from BC.

Welcome to the forum fellow Torontonian! As for casings I am listing the GTA based places that I recommend below. They aren't directly in Toronto but close enough.

1. Malabar Super Spice in Burlington. Great people and very helpful small operation that is open to the public every Thursday and Friday. http://www.malabarsuperspice.com/

2. Canada Compound. Located just north of the city in Woodbridge. Never gone there myself but it has been recommended by friends. http://www.canadacompound.com/

3. Unipac. In Mississauga near the airport just off Airport Road. Just placed an order for some sheep casings, seem helpful and reasonably priced. http://www.unipac.ca/

That should get you started, any of those places will be able to get just about any casing/sausage supply you need.
