Welcome to the forum fellow Torontonian! As for casings I am listing the GTA based places that I recommend below. They aren't directly in Toronto but close enough.
1. Malabar Super Spice in Burlington. Great people and very helpful small operation that is open to the public every Thursday and Friday.

http://www.canadacompound.com/3. Unipac. In Mississauga near the airport just off Airport Road. Just placed an order for some sheep casings, seem helpful and reasonably priced.
