Hello all,

I am new to sausage making and I love this site, very informative.

My question is has anyone tried this recipe http://lpoli.50webs.com/index_files/Chorizo-Goan.pdf

I have ground, mixed, stuffed and hung the sausages, but now reading on this site I am wondering if they will be safe without a started culture or spraying with mold.

Any help would be appreciated.

I can't really help you. He seems very knowledgeble.
If you don't mind, I would like to add another question about this recipe as I also have been looking at making it: If you eat them fresh (basically not hanging them or smoking them), you wouldn't need to use cure #2, correct?

It would be safer if it was fermented with a culture before drying or with the addition of vinegar before drying (which he says is typical). The drying conditions are not very well defined, so this may cause trouble as well. I would never dry a sausage without using cure # 2, for fresh sausages, it can be omitted. Welcome to the forum. :D
