Recommend me a sausage stuffer...Please!

Hi there,
Getting in a tiz looking at all the differant stuffers out there..

Im looking to purchase an all stainless steel vertical sausage stuffer that will take 4lb of mixture, Budget of around 100 to 150. (is 5 litre big enough?) usually make 8 or 12lb at a time in 2 or 3 recipes.

Is there anywhere I can go to collect instead of on-line sales?

Having a family get together on boxing day at a relatives and Im making the sausage for sausage and mash!

Oh, and is there any cure I can add to the mix to keep a pink colour instead of the sausages turning a bit greyish? Im not bothered about it but my mother says they should be pink!

A 5 litre one should easily hold 4lb of mix. IIRC a 3 litre should also hold about that much.

Ah, mothers! Who'd have 'em!

Vitamin C, by way of sodium ascorbate/erythorbate or ascorbic acid, is used as an anti-oxidant in commercial sausage. If trying that, I'd use 300 - 400mg/kg - 0.3gm per 1kg meat.

An alternative would be to use cure #1 which will certainly keep the sausage pink. It's not something I'd choose to do, but if I was pushed, I'd say to use it at a rate to give 50 - 80 mg/kg of nitrite. That's about 1gm of the Cure #1 from the site shop to 1kg of meat.

That said, I should point out that I don't think that either is necessary, or desirable.

I agree!

The last time my mother took some on the day they were made she binned them the next day as she said they were off! Gone a funny colour! Mine were fine from the same batch..
Shes not a big meat eater and would never eat a supermarket sausage.. Might try the cure for an easy Christmas!!

Hi Steve,
I own a 5 litre upright stuffer and it is big enough, matter of fact they are rather big. Make sure you buy one with stainless stuffer tubes. Almost all of them are Chinese made.
Buy from a reputable supplier.

I got the 3 litre Vertical Stuffer from the site shop with next day delivery - well impressed.
After sales is also impressive.

We previously used the stuffer that is part of our mincer

We make about 2 kilos at a time and the 3ltr is quick and easy to top up and clean. It's great to have dedicated mincer and stuffer.
