Backwoods Summer Sausage kit - anyone used?

Hi guys,

I managed to shoot a nice Doe and Buck this year - so the freezer is full and I need to convert it into summer sausage.

I have never made this before, so for the first time I bought a Backwoods Summer Sasusage kit that's made by a company called LEM.

Just wondering if anyone has any experience with this kit?

I know I really should be using one of the recipes on here for summer sausage (or making up my own!)
but for the first time I wanted something that would be easy to do, and the kit has everything in it I'll need.

anyways - If anyone has any tips or feedback about this kit I would appreciate it..

I have some nice chipotle powder I was thinking of adding to half the batch - but I have never tasted summer sausage so I have no idea if that will work out or not :lol:

This isn't my area of expertise, but I'm sure that other Australian members will help you shortly.

But isn't LEM a US company?

Hi Wheels - yep it's an American company.
But that site I sent a link to allows US companies to sell directly to Australian customers.

Which is also why it cost me ~$50AUD for a $19 USD kit :roll:

I don't mind though, it was easier than sourcing everything from a few different places...

I've made lots of fresh sausages before, but never summer sausage.

OK -
So if it's raining this weekend, I'm going to review this kit and post some pics in this section.

The kit comprises:
Spice mix with cure packet x4
Fibrous casings x20
Tying string ~ 2 metres.

ok - so these turned out great.

kit was really easy to use, and the taste was great.

I ended up making half the batch in a hot chili version by adding crushed chilli, Ancho and Chipotle powders with some smoked paprika thrown in too.

I made them as directed, let them rest in the fridge for 24hrs and then smoked for 2 hours before an ice bath.

My regular smoker was on the fritz, so I had to improvise with a couple of cardboard boxes and an electric frypan.
