freezing sausages made with frozen chicken?

I have a load of frozen chicken thighs I want to turn into sausages but I'll need to freeze them after I've made them.

I was always taught not to refreeze thawed chicken - is it actually unsafe?

If so, is there a way around this - can I precook the chicken etc?

The US Gov't say:

Refreezing
Once food is thawed in the refrigerator, it is safe to refreeze it without cooking, although there may be a loss of quality due to the moisture lost through thawing. After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods. If previously cooked foods are thawed in the refrigerator, you may refreeze the unused portion. Freeze leftovers within 3-4 days. Do not refreeze any foods left outside the refrigerator longer than 2 hours; 1 hour in temperatures above 90 °F.

If you purchase previously frozen meat, poultry or fish at a retail store, you can refreeze if it has been handled properly.

You could make the chicken into sausages then let the links set overnight in the fridge. Then poach them at 165-170 F for 10 - 15 minutes depending upon casing size before packaging them and freezing.

Well that's good news - almost certainly no problem if you are careful and use the fridge for almost everything.

But to be on the safe side poaching seems like a good option. Presumably when you defrost and fry them you are just looking to colour them up?
