I have just finished two slabs of streaky bacon, each about 2kg. Cured then smoked. At this stage, I normally go back to the butcher who sold me the pork bellies, and they very kindly slice them for me. Then I freeze the bacon in packs.
However, they're on holiday till next Thursday.
It's been about ten days since I finished the curing - since then they've been kept in the fridge, apart from the day of smoking. Will they keep another 10 days before freezing?
